Hot and Sour Soup

Taste buds and souls are invited on a culinary journey! This time around we try Hot & Sour Soup - a bold dish with comforting textures. Hot and tangy soup from traditional Chinese cuisine. Take a bowl of slurpy tofu, sprinkling some salty bamboo shoots and earthy mushrooms into a thick, nutty broth. Soup makes a warming dinner on a cold evening or a refreshing starter at your next dinner party. And so easy to make at home - just adjust the heat & sourness to your liking! Ingredients
  

  • 4 cups chicken broth
  • 3 shiitake mushrooms sliced
  • ¼ cup wood ear mushrooms sliced
  • ¼ cup bamboo shoots strips
  • 4 oz firm tofu strips
  • ½ tsp red chili flakes
  • ¼ tsp white pepper
  • 2 tbs soy sauce
  • 1 tsp dark soy sauce
  • ¼ tsp sugar
  • 2 tbs corn starch
  • 3 tbs water (for the corn starch)
  • 2 eggs
  • ½ tsp sesame oil (optional)
  • 1 green onion sliced
  • 2 tbs white vinegar (add in as the last item)

Instructions
 

  • In a pot on medium heat, add chicken broth, shiitake mushrooms, woodear mushrooms, bamboo shoots, tofu, chili flakes, white pepper, soy sauce, dark soy sauce, and sugar.
  • In a small bowl, mix together cornstarch and water to create a slurry. Bring the broth to a boil then slowly pour in the slurry while stirring at the same time to evenly thicken the soup.
  • Lower the heat so that the broth is just gently simmering. Stir quickly in a circular motion to create a tornado. Stop stirring, then immediately pour the whisked eggs slowly into the swirling broth. Gently stir in the same direction to create thin silky egg ribbons.
  • Turn off the heat and add in sesame oil, and green onions. Gently stir to combine.
  • Finish off by adding in the vinegar. This ensures the vinegar does not burn off from the heat during the main cooking process.
  • Taste test, adjust it to your liking, and enjoy!

Notes

Hot and Sour Soup is very flexible.  Add, subtract, or replace anything you like.
Optional Ingredients that can added:
  • 2 tomatoes (medium size)
  • 1 oz red bell pepper (half of a bell pepper, at the default serving size)
  • Shrimp or Pork can replace the Wood Ear Mushrooms if desired.
  • Add 2 oz of Asian noodles or thin spaghetti.
